WThis is a home-style take on a cocktail featured on our latest cocktail list. This is a party-sized prepared mix which is loaded full of essence of a festive period, which makes it ideal for your festive gathering. Reserve the remaining syrup for morning drinks, desserts, or to mix more rounds of the drink.
Bikini Recipe
Yields 10 servings
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Cocktail (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Directions
For the Cordial: Put every ingredients inside a pot, bring to a simmer, agitating to dissolve. Next, take off the stove and let it to cool down fully. Decant to a sterilised bottle, seal and refrigerate it chilled, it can be stored for about a month.
To make Batch Mix: Mix all the spirits and syrup in a big jug, allow it to infuse for one hour, then filter it best through muslin, so it's fully clarified.
For serving: Measure 85ml of the premix into a stirring glass filled with ice, and stir lightly for a minute until cold. Filter into an chilled martini glass or equivalent, garnish with a few cranberries and finish with a quick spritz of the essential oil above the glass.
